The Perfect Filipino Pork for that Last Summer BBQ

It’s August, which means barbecue season is winding down. But you can still expect a few more weeks of good weather to host a barbecue, which means you should definitely start making plans for yours. Grilled meat, vegetables and friends and family makes for the perfect combination as we head into fall.

If you’ve already had plenty of burgers and steaks this summer, why not try branching out and grilling something different? These Filipino pork skewers are a great recipe to try, and they’re not too complicated to make either. Here are the details:

Filipino Pork BBQ

Ingredients

  • Pork shoulder or pork belly cut into 1 inch cubes
  • Garlic – 1 teaspoon, finely minced
  • Soy sauce – 1/2 cup
  • Calamansi (Filipino lime) juice – 1/4 cup, alternatively use lemon juice
  • Banana Ketchup – 1/2 cup, can be found in Asian markets (tomato ketchup can be substituted)
  • Ginger Ale – 8 ounces (7-Up or Sprite can be substituted)
  • Brown Sugar – 1/2 cup
  • Sea Salt – 1 teaspoon
  • Freshly Ground Black Pepper Powder – 1 teaspoon
  • Bamboo Skewers – 12 to 14, pre-soak in water for 20 minutes

Instructions

To put this recipe together, you’ll make a marinade and a grilling glaze. Mix up all of the ingredients, except the brown sugar and half of the ginger ale. Pour all but a half-cup of the mixture over the pork cubes and allow it to marinate, covered, in the refrigerator overnight. When you’re ready to grill, place the pork onto the skewers. Then make your grilling glaze by adding the brown sugar and remaining ginger ale to the reserved marinade. As you grill the pork, brush on the grilling glaze every few minutes. For those who enjoy a spicy bite, add a touch of sriracha sauce to the marinade.

Serve these delicious kebabs with fresh vegetables, salad and rice. You can even make some traditional Filipino salads featuring green mango or papaya pickle relish.

Enjoy!

Spragg’s Free Range Production Process: Everything You Need to Know About Our Pigs

Spragg’s Meat Shop was born out of a dream to raise pigs. Greg Spragg had experience working on a commercial pig farm, but when it came to farming practices he had a different vision. Bonnie and Greg Spragg began raising their own pigs in 2002, after Bonnie gave Greg three piglets for his birthday. Over the years, their business grew, and they embraced the free range system for raising pigs. Today, customers can count on Spragg’s to use low-stress farming practices while providing the freshest free-range pork products in all of Alberta.

What does our production process involve?

Happy Pigs

Our pigs are raised outdoors and have free range through two five acre pastures. These pastures are the perfect place for pigs to live. They can happily graze all day long, as well as eating a mix of barley and fababeans from their feed bunks. They have access to water for drinking and mud to keep cool.

Healthy Pigs

Many commercial pigs are fed antibiotics to prevent disease. You won’t find the use of antibiotics on the Spragg’s farm. We work hard to ensure that our pigs live healthy lives in a healthy environment. We provide our pigs large, open spaces to enjoy throughout their lives. We also ensure that they get a plant based diet, free from any processed animal based protein meals. The plant based diet starts with all whole grains grown in Rosemary and the pasture grasses. Greg grinds the dry grain into a coarse flour to make it more digestible for the pigs. In the winter, the pigs also get straw and dried alfalfa along with their ground ration.

Our ethical production process means that you can feel good about the pork you’re purchasing! The pig that made your pork possible had a good life and has made a healthy meat product without excessive chemicals, animal byproducts and unnecessary medicines. Stop by one of our shops today to learn more about our free range production process!

Barbecuing Tips for Easy Clean-Up

Barbecuing is a great summer pastime. Delicious meats and vegetables grilled to perfection make a spectacular outdoor meal. But, as with many cooking endeavours, it’s the clean up that can be a pain.

Never fear, with these tips, you’ll be on your way to a BBQ system that makes cleaning up a cinch.

Clean Your Grill Grate Before Use, Not After

This tip will make barbecuing so much easier. Instead of trying to scrape everything off and clean up after grilling, let it be. Every time you fire up your grill, let it heat up for a good 10 minutes. Then grab your grill scrubber and scrape off the charred-on food and stickiness that has now turned to ash, thanks to your heated grill.

Oil it Up

Once clean, add a very small amount of oil to a paper towel and apply it to your grill grates. This will help reduce sticking. However, if your food already has an oily marinade, you can skip this step.

Make it Hot, Hot Hot!

You’ll want your barbeque to be very hot when you first place your meat on the grill. This will sear the meat, which also helps to keep it from sticking. After the initial sear, you can turn down your grill if you’d like. Remember to be patient before you turn it over. Turning too soon is another reason meat sticks to the grill.

Do Dump Ash

At the end of your grill session, it’s easiest to dump ash right away. Otherwise the ash may lump up and stick to the bottom of your grill, making it tougher to clean.

If you’re planning a barbecue, remember to grab your meat from Spragg’s for the best fresh, free-range pork in the province. Happy grilling!

Is the Reputation that Pigs are Dirty True?

“Filthy as a pig!”

“He eats like a pig!”

These are some common phrases you might hear about pigs.

But, are pigs really dirty and nasty? While they may have that reputation, those who work directly with these peaceful animals may tell you otherwise.

Commercial pigs don’t live in their natural habitat. For that reason, you may see them wallowing and rooting in their own filth, which is rather disgusting. But, they don’t really have a choice. Close quarters and no access to the outdoors mean that they don’t have much freedom to root and cool off as they would naturally.

However, free-range pigs, such as those at Spragg’s show different behaviour. They eat plants and root around in pastures and forests. Yes, maybe they wallow in the mud, but this serves to help keep them cool and prevent sunburn. Because pigs don’t have functional sweat glands, staying cool is a top priority. And mud is just the substance to help them do it.

Did you know something else? Some pigs even wash their food before eating it! Researchers at a zoo in Switzerland discovered that some of the pigs washed off apple halves covered in sand in a stream feature in their habitat. But, here’s the thing: the pigs only washed off dirty apple halves, they ate the clean ones without washing them. So, pigs can see when something’s dirty and decide to do something about it.

As you can see, pigs aren’t really filthy at all! Well, in their natural environment anyway. That’s why you should support free-range pig farming as much as possible. We farm clean, happy pigs to make our customers happy and full.
