Fennel Pork

9 Things You (Probably) Didn’t Know About Pork

It’s no secret that pork is the world’s most popular type of meat. Studies have shown that pork is nutrient rich, has considerable health benefits and is absolutely delicious! (Okay, we’ll admit, that last fact may be based on personal experience, not science.)

But what about all the pork facts that aren’t common knowledge? Are you curious about all of pork’s best-kept secrets? Well, you are in luck! Here are nine things you (probably) didn’t already know about pork:

  1. Pork tenderloin cuts are just as lean as skinless chicken breasts.
  2. The protein content of lean pork can be as high as 89%, making it the perfect choice for bodybuilders, recovering athletes, and post-surgical patients.
  3. Pork is an excellent source of vitamins and minerals, including thiamin, zinc, vitamin B12, vitamin B6, niacin, phosphorus, and iron!
  4. Pigs are incredibly clean. When given sufficient space they will keep their eating and sleeping areas uncontaminated. This is one of the reasons we allow our pigs to roam free!
  5. Pork is versatile. It can be cooked by marinating, grilling, skewering, dry rubbing, boiling, baking, barbequing, microwaving, pan frying, and stir frying.
  6. Pork is rich in taurine, creatine, and beta-alanine, which helps muscles function, and allows for strength buildup.
  7. Adult pigs can run at speeds of up to 17 km per hour. Trust us, we’ve seen it! Our pigs have over 20 acres of land to race through!
  8. Selenium found in pork helps to cure anemia.
  9. Pork skin, bones and organs contain a high level of collagen, which helps with preventing acne, anti-aging, and to hydrate the skin.

Calgary, AB, October 20, 2017 – Bonnie and Greg Spragg, owners of Spragg’s Meat Shop, received the “Environmental Stewardship” award at the 2017 Small Business Calgary Awards presented by the Calgary Chamber of Commerce. The awards were held the evening of October 19, 2017, at the BMO Centre.

The Environmental Stewardship Award recognizes a Calgary small business that has demonstrated commitment and has been influential in the area of environmental sustainability through leadership and the integration of environmentally responsible practices into their business model.

“We are pleased to be recognized for our hard work and to be acknowledged for our sustainable farming practices. It is an honour to be celebrated as an environmental leader in the Calgary small business community,” explains Bonnie Spragg.

Since Spragg’s Meat Shop’s inception in 2005, Bonnie and Greg Spragg have been committed to ethical, sustainable farming practices that support a healthy environment for their free-range livestock, and the community as a whole.

Game Day Slow Cooker Beer Pulled Pork

With regular season NFL underway and the CFL heating up, fall is football season! This is a perfect recipe if you’re hosting friends and family on game day, and if you’ve got a big group of fans, you can even prepare two to feed around 30 people.

Ingredients

1 (5 pound) pork butt roast

2 teaspoons salt

1 teaspoon ground black pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1 (12 fluid ounce) can beer

1 (12 fluid ounce) bottle of barbeque sauce

Instructions

  • Set the slow cooker to High.
  • Place the pork in the slow cooker. Season top of pork with salt, pepper, onion powder, and garlic powder. Pour beer into the bottom of the slow cooker and place the lid on the slow cooker crock.
  • Cook pork on High for 1 hour. Reduce slow cooker heat to Low and cook for at least 8 hours or overnight.
  • Remove pork from the slow cooker and shred with two forks. Discard juices and rinse out slow cooker crock. Return shredded pork to slow cooker and stir barbeque sauce into pork.
  • Cook on Medium for 1 hour.

Serve on onion or hamburger buns.
