At Spragg’s Meat Shop we know that a good breakfast can make or break your day; that's why we have 4 different types of bacon! Choose between the regular sliced bacon, back bacon, English bacon or cottage bacon. They all have the flavor you're looking for and will make a great breakfast or any meal you are cooking.
When someone thinks of bacon it is usually in long strips with streaks of fat and meat. This type of bacon is made from the pork belly and is the most popular one we make. Before the belly is bacon, it is a big slab. We take this slab and inject it with our signature brine as well as let it soak so the meat absorbs all of the flavour. Once the slab of pork belly has sat in the brine for a while, we put it on hooks and hang it on a smokehouse truck. Then it goes into the smokehouse and that's when it gets the rest of the yummy flavour you're craving. Once smoked, we let them cool in the cooler and then we slice. At Spragg’s Meat Shop all of our bacon is sliced to the same size but if you prefer ‘thick cut’ bacon we also sell slabs of bacon. This way, we’ve done all of the hard work and you just have to cut it to your desired thickness. This traditional pork belly bacon is a great choice for any meal.
The next type of bacon we make is back bacon or as many people call it “Canadian Bacon”. This is made from pork loin, meaning you get small circles shaped slices with less fat. The process for making this type of bacon is the same as regular sliced bacon, it soaks in the same signature brine, goes through the same smoke cycle and is the same thickness as everything else. Back bacon is a great choice for someone who wants the bacon flavour but doesn't like the fat in normal bacon. We like to fry this bacon in a pan and put it on sandwiches, it is the perfect size.
Third on the list of bacon is English Bacon. This type also comes from the loin but still has some of the pork belly attached, we like to say it has a little bit of a tail because of this. English bacon also has a little bit of a different process of being made. The brine is the same, we inject and soak the meat but once that step is completed we do not smoke the loin. This gives it a slightly different flavour then back bacon. English bacon is also traditionally sliced thicker, so we do that too. Once it’s sliced we package it just like the other types of bacon we sell. This type is perfect for someone who likes a combination of back bacon and regular sliced bacon. This cut is used a lot in British and Irish cuisine so it might be exactly what you're looking for.
By now your mouth must be watering from all this bacon talk but we have one more type to talk about, cottage bacon. This comes from the pork shoulder and also has a round shape to it. Since the shoulder has marbling throughout it you can really see this in the slices of bacon. Instead of being in streaks like regular bacon it is spread throughout the piece. To make this type it goes through the same process as the others. This bacon is perfect for your sandwiches, beside your pancakes in the morning or to cut up and put in a dish. No matter what you decide to do with it, you’ll get the bacon flavour you are looking for.
