What are smoked pork chops?

Smoked pork chops, traditionally known as Kassler in Germany, are a fully brined and partially cooked cut of pork that delivers rich flavor with minimal effort in the kitchen. At Spragg’s Meat Shop, we begin by taking a whole pork loin and submerging it in a carefully prepared brine. Brining is a process that uses a saltwater solution to enhance both the flavor and moisture of the meat. It helps tenderize the pork and gives it that signature savory, slightly salty taste that smoked meats are known for.


Once brined, the loins are moved to our smokehouse, where they’re slowly smoked using natural wood smoke. This not only infuses the meat with a deep, smoky aroma, but also gently cooks it to about two-thirds of the way through. Because of this, smoked pork chops are considered “hot smoked”, meaning they’re preserved, partially cooked, and safe to eat once heated through. This makes them a convenient and flavourful option for quick meals.

After smoking, the loins are sliced into ¾ inch thick chops and packaged in pairs (perfect for a quick dinner or a small gathering) These smoked chops are incredibly versatile, but our favorite method is to finish them on the BBQ, where the heat enhances the smoky flavor and adds a nice char.


The dish’s roots in Germany make it a popular choice during Oktoberfest, often served with sauerkraut and potatoes. If you’re thinking ahead to fall celebrations, now is a great time to stock up. Our top 3 ways of cooking:


1. On the BBQ

Fire up the grill and place the smoked pork chops directly on the BBQ. Cook for 8-10 minutes, flipping halfway through to get those perfect grill marks on both sides. Your goal is to heat them through, they’re already cooked about two-thirds of the way in our smokehouse.


Side ideas: While the chops are grilling, boil up some pierogies or potatoes and warm up a scoop of sauerkraut. Want to keep the whole meal on the BBQ? Grill some fresh veggies or corn on the cob. These pork chops are incredibly versatile, pair them with whatever you love.



2. Pan Frying

No BBQ? No problem! Smoked pork chops do just as well in a frying pan. Use a large pan so both chops fit comfortably, and cook over medium heat for 5-7 minutes per side until fully heated through.


Serving tip: Toss some sauerkraut into the pan in the last few minutes to warm it up and soak up some of that smoky flavor. For a twist, try adding a splash of soy sauce while frying and serve the chops with fried rice. The flavors hold up beautifully with both traditional and modern sides.


3. In the Oven

Looking for a hands-off dinner option? Preheat your oven to 350°F and place the smoked chops on a baking sheet. Add cubed potatoes, sliced onions, and chopped broccoli right alongside them for a simple one-pan meal. Bake for about 20 minutes, or until everything is heated through and slightly crispy on the edges.


Bonus: You can switch up the veggies depending on what’s in your fridge, it’s a great way to use up leftovers and still get a full, hearty meal.
