A Step-by-Step Guide to Wild Game Processing

Calling all hunters! It’s hunting season, and we are just a tad excited.

If you didn’t know already, Spragg’s does indeed process wild game that hunters bring in. Processing your meat can be a task, so we are happy to skin, age, and professionally prepare your meat at the right temperature, so that it’s ready to be made into your next big feast or stored away in your freezer to last you through the winter. 

Here are a few details on our process, from the minute the meat arrives at our shop to when you go and pick up your fully processed order!

Transporting Your Meat to the Shop  

It’s important to note that it’s your responsibility to follow all regulations while transporting your meat to our shop.  

We accept whole game carcasses, as long as the animal has been gutted and tagged before its arrival. If your animal is skinned, feel free to drop it off at either our Calgary or Rosemary locations. If unskinned, please bring to our Rosemary shop. Our Skinning fees are as follows:

  • $45 for deer or any anima under 200lb

  • $90 for Moose and Elk

 We also accept deboned meat that we can process and make into sausage. As long as the meat has a WIN and tag number, you can drop off the meat frozen or fresh.

Note:

  • We do not accept bear or cougar because of the possibility that they might contain trichinosis, which could be harmful to our hogs.

  • We do accept deboned duck or goose meat, but we do not accept whole carcasses.

  • We have specific recipes and requirements for Waterfowl.

We receive animals as they are brought in. The only time we recommend scheduling a time to drop off your meat is if you need to visit us after hours. During hunting season, we do offer an after-hours wild game receiving option in Rosemary only. In Calgary, you can drop off your meat anytime between 10 am and 6 pm 7 days a week.  

After Delivery

Once you drop off your meat, we will cut it into steaks, roasts, stir-fry, or ground – whatever you ask for!

NEW to 2019, all of our wild game will be processed and vacuum-sealed with standard-sized packaging for you to choose from.

For dry-ageing, we allow for specific timing depending on the animal and the condition of the carcass we receive. We ask that animals are delivered within 24 hours of being shot, as cooling the carcass to an internal temp of 4 degrees as fast as possible is the key to maintaining the meat quality. On average:

  • We will hang a deer between 2 to 5 days

  • We will hang a moose or elk between 7 to 10 days.  

It’s our priority to keep every animal separate through the entire process in our facility. We don’t batch grind or mix the animals at any time, meaning every hunter will get only their meat back.

New in 2019, if a hunter brings in multiple deer, we will be keeping every animal separate until the hunter has received the CWD results.

Picking Up Your Order

We generally try to target a 2 to 3 week turn around. However, the volume of animals received at this time of year can make timelines vary. We will give you a call when your order is ready, and we are happy to transport any order to our Calgary store if that is a more convenient pick-up location for you. Please note that we ask hunters to pick up their orders within 1 to 7 days. Freezer storage fees will be applied if an order is left for more than seven days. As much as we would like to store your meat, we work with a lot of hunters and simply don’t have the freezer space!
