Meal Prepping? Try This Easy Sheet Pan Pork Chops and Potatoes

Are you looking for a new recipe to try for meal prepping this week? This easy ranch pork chop recipe will fit the bill perfectly. Like you, we love sheet pan meals! They are so easy to whip together, and the cleanup is a breeze. This recipe would also be a great meal to feed for your family on weeknights when cooking just feels like another chore.

Ingredients

  • 3 tbsp olive oil

  • 2 tsp dry ranch seasoning (buy the mix or make your own)

  • 1 tsp smoked paprika

  • 1 tbsp dry oregano

  • 1 tsp black pepper

  • 6 pork chops (we have both bone-in and boneless at the Meat Shop)

  • 2 lb baby potatoes (or cubed Yukon gold potatoes)

  • 1 tbsp fresh parsley chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400 degrees F and prep your baking sheet with cooking spray or olive oil.

  2. Toss your potatoes and pork chops with more olive oil and place them on your baking sheet.

  3. To make the dressing, combine the ranch seasoning, smoked paprika, oregano and black pepper and rub over the pork chops and the potatoes.

  4. Place the baking sheet in the oven and set it and forget it for about 30 minutes. Cooking times vary based on the thickness of the pork chops. You will know your meal is ready when the pork chops are cooked through (an internal temp of 145 degrees F), and the potatoes are tender.

  5. Top your masterpiece with chopped parsley and serve immediately. Or seal in air-tight containers in the fridge for up to 4 days. 

TIP: Pair your pork chops and potatoes with fresh veggies from the farmers’ market, or your favourite salad. If you don’t have pork chops kicking around your freezer, try this recipe with chicken breasts or boneless thighs.
