Quick and Easy Weeknight Chicken Dinner

Are you looking for a quick and easy chicken dinner to try with your family this week? As foodies, we love to experiment with new meals, but we admit that we don’t love the clean up afterwards. This great meal that is quick, healthy and delicious, and involves minimal cleanup!

Ingredients

  • 3 tbsp of olive oil

  • 1 tbsp of Dijon mustard

  • 1 tbsp of whole grain mustard (or double the Dijon mustard)

  • 1/2 tsp of dried thyme

  • 1/4 tsp of dried rosemary

  • Zest from 1 lemon

  • salt and black pepper, to taste

  • 16 oz baby red potatoes, halved

  • 4 boneless, skinless chicken breasts

  • 1 lemon, thinly sliced

  • 2 tbsp chopped fresh parsley leaves

Instructions

  1. Preheat oven to 375 degrees Fahrenheit

  2. In a small bowl, combine 2 tbsp of the olive oil, both mustards (or double the amount of Dijon mustard), dried thyme, dried rosemary and lemon zest and season with salt and pepper, to taste. Set this to the side.

  3. You will need to cut four sheets of foil, about 12-inches long. Divvy up the potatoes equally and place them in the center of each of the four sheets of foil in a single layer.

  4. Remember the 1 tbsp olive oil that you didn’t use earlier? Drizzle that over the potatoes and season with salt and pepper, to taste. Gently toss the potatoes.

  5. Add the chicken breasts on top of each packet of potatoes. Grab the bowl of sauce you put aside earlier and coat both sides of the chicken. Add the lemon slices on top.

  6. Create a wholly sealed packet with the foil by folding the sides of the foil over the chicken. Place the packets on a baking sheet and place into the preheated oven.

  7. Bake until the chicken is cooked through (no longer pink), and the potatoes are tender. We estimate 25-30 minutes for the average 5-8oz chicken breast.

  8. Garnish the chicken with fresh parsley leaves and serve piping hot to your hungry family!


*Cooking time is an estimation and will vary depending on the size and thickness of the chicken.

Pro Tip: If you’re interested in an easy spin on this recipe, you can replace the chicken breast with skinless, boneless chicken thighs or add in any of your favourite veggies. Fresh spring green beans or Carrots would work great!
